Sticking starts before the food hits the pan.
Protein and starch behave differently as they heat. A wet piece of fish placed into a barely warm pan can cling; the same fish dropped onto an overheated dry surface can seize for a different reason. Food temperature, surface moisture, preheat and the moment you try to move the food all matter. That is why good release is a cooking technique as much as it is a coating feature.
Why Air Road exists.
The Air Road surface was developed around more predictable contact between food, oil and the coated pan. Rather than asking the cook to solve every sticking problem with more oil, the design works with BOOHGLE’s ceramic-coated surface and moderate heat. The useful claim is not “zero sticking.” It is that geometry, coating and heat management were designed together for easier everyday release.
Use less force, not just more oil.
Start with a clean, dry pan. Use low-to-medium heat for most everyday cooking, add only the amount of oil the recipe needs, and let food develop a cooked surface before forcing it to move. Silicone or wood tools are gentler on the coating than sharp metal edges. If food resists, the better move is usually a few more seconds—not scraping harder.
Care is part of performance.
Release changes as residue builds or the coating is repeatedly overheated. Let cookware cool before washing, avoid abrasive cleaners, and do not preheat an empty ceramic-coated pan over high heat for long periods. The best way to keep food-release performance consistent is to treat temperature and cleaning as part of the product system.

Release performance varies by recipe, heat source, oil, food moisture, surface condition, and care. No coated surface keeps the same release performance forever, so the most useful expectation is consistent performance when the pan is used and cared for as directed.
