Grilling fatty foods in a pan creates two simultaneous jobs: build browning where food touches the surface, and manage the liquid fat that renders out. Rendered fat needs somewhere to go.
As meat heats, fat liquefies and moisture leaves the food. On a completely flat surface, that liquid can collect around the food. Raised contact points and channels create lower zones where rendered fat can move, changing the balance between direct contact and liquid sitting under the ingredient.
Geometry does not replace heat control.
The surface pattern is only one part of the result. Start with moderate heat and give the pan time to warm evenly. Place meat with enough space between pieces so steam can escape. Let browning develop before moving the food, then adjust heat as rendered fat accumulates. High heat is not the shortcut; control is.
Drain with intention, not during a rush.
If the recipe produces a large amount of rendered fat, pause cooking before moving or pouring it. Use oven mitts as needed, keep the detachable handle fully secured when the instructions permit lifting, and pour away from your body into a heat-safe container. Never pour hot cooking fat directly down a household drain.
Clean the channels, not just the high points.
After the pan cools, wash with warm water, a soft sponge and mild detergent. Pay attention to the recessed paths where rendered fat can settle. Avoid sharp scraping tools and abrasive pads that can damage a ceramic-coated surface. Thorough cleaning helps the next cook start with a predictable surface.
